Newari food — the Kathmandu valley's own cuisine
Newar cuisine is the most developed food tradition in Nepal — dozens of distinct dishes, elaborate feast structures and its own vocabulary in Nepal Bhasa. Start with samay baji, then choila, bara, chatamari, kwati and yomari. Most visitors never try any of it, which is the single biggest food mistake in Nepal.
Part of What to eat in Nepal
The Newar are the indigenous people of the Kathmandu valley, the builders of the Durbar Squares and the temples that make the valley a UNESCO World Heritage site. Their cuisine is correspondingly elaborate — organised around festivals and feasts, with dozens of named dishes and a set of ceremonial platters with fixed components.
It is also almost invisible to visitors. Newar restaurants look unremarkable, menus are often untranslated, and the tourist trail runs straight past them. This guide is a shopping list.
Samay baji — start here
Samay baji (समयबजी) is the ceremonial Newar platter and the single best introduction to the cuisine, because it contains most of the tradition on one plate.
The core components are chiura (beaten flattened rice) as the base, choila (spiced grilled buffalo), bhatmas (black soybeans), wo or bara (a lentil pancake), a boiled or fried egg, ginger, garlic, a fried fish in some versions, and achar. It is served cold or at room temperature, and traditionally accompanied by aila, the Newar distilled spirit.
It appears at every Newar festival and life-cycle ritual, and its components have symbolic meaning as well as culinary logic. Order it as a shared plate.
The dishes to work through
Once you have had samay baji, these are the individual dishes worth ordering.
- छोयला Choila — buffalo grilled over flame then tossed with mustard oil, chilli, ginger, garlic and spices. Eaten cold. Smoky, hot and outstanding. Duck and chicken versions exist.
- बरा Bara / Wo — a thick savoury pancake of ground black lentil, fried, sometimes topped with egg or minced meat. Nepal's answer to a fritter and utterly addictive.
- चटामरी Chatamari — a thin rice-flour crêpe with toppings of minced meat, egg and vegetables. Widely called 'Newari pizza', which undersells it.
- क्वाँटी Kwati — a soup of nine sprouted beans, eaten especially at Janai Purnima. Deeply savoury and genuinely nutritious.
- सन्या खुना Sanya khuna — jellied fish soup, a delicacy that divides opinion. Try it.
- यमरी Yomari — a fig-shaped steamed rice-flour dumpling filled with chaku (molasses) and sesame, eaten at Yomari Punhi in December. Sweet, warm and lovely.
- आलु तामा Aloo tama — potato with fermented bamboo shoot and black-eyed beans, in a sour soup. The fermented bamboo makes it unmistakably Nepali.
- सुकुटी Sukuti — dried spiced meat, eaten as a snack or in a sadeko salad.
- जुजु धौ Juju dhau — Bhaktapur's 'king curd', thick sweet buffalo yoghurt set in unglazed clay pots. Worth a trip in itself.
Sadeko, and the Newar way with salads
'Sadeko' (सादेको) means dressed or tossed, and it is a Nepali preparation applied to many things — wai wai sadeko (instant noodles), sukuti sadeko, aloo sadeko, bhatmas sadeko.
The dressing is typically mustard oil, chilli, lemon, salt, coriander and timur, tossed raw. It is fresh, hot and sour, and it is the closest thing Nepali food has to a salad.
One caution: sadeko dishes are uncooked and often use untreated water or raw ingredients. They are widely eaten and generally fine in a good kitchen, but they are a higher-risk order than something served hot from a pan.
Where to eat it
Newar food is concentrated in the Kathmandu valley — Kathmandu, Patan (Lalitpur) and Bhaktapur — and that is where to eat it.
- Patan and Bhaktapur have the densest concentration of traditional Newar kitchens, often in courtyard houses rather than on main streets.
- In Kathmandu, look outside Thamel. The old city around Asan and Indra Chowk, and the areas around the Durbar Squares, are where the real places are.
- Bhojanalaya and small family kitchens with untranslated menus are the target. Pointing works; so does asking for samay baji by name.
- Bhaktapur specifically for juju dhau, from a shop that sets it in clay pots rather than plastic.
- Newar feasts (bhoj) at festivals are enormous and, if you are invited to one, unmissable. Accept.
Aila and the drinking culture
Newar food is closely paired with alcohol in a way most Nepali cuisines are not. Aila (अयला) is the Newar home-distilled spirit, traditionally served in a clay cup and poured from a height, and thwon is a rice beer.
Both are traditionally made at home and are integral to Newar feasts and rituals rather than incidental to them. Samay baji with aila is the pairing.
The practical caution is the same as for any home-distilled spirit anywhere: strength and quality are unregulated and vary considerably. Drink modestly, prefer places with an established reputation, and be sceptical of anything served from an unlabelled container by someone with no stake in your wellbeing.
